Exposed: The Long, Cruel Road to The Slaughterhouse

There is NO need for animal foods in human nutrition. An entirely healthy — and indeed superiorly healthy — diet can be had from the "four vegan food groups" (fruits, vegetables, grains and legumes).

Likewise there is no need to eat animal foods in order to have a varied, delicious and satisfying diet — there are plenty of sensational tasting vegan foods from cuisines all over the world, including Asian, Indian, Middle Eastern, and good old American traditions.

So, give it some thought. It wasn't that easy to even go vegetarian when I made that choice back in the early 1970s, but today even the big supermarket chains carry a lot of vegan foods from tofu to Boca Burgers, and of course whole grains and legumes and fresh fruits and vegetables, and it is a lot easier than you might think to go vegan and just withdraw ALL of your energy from the completely needless cruelty of raising and slaughtering sentient beings for food.

Call them canapes, antipasto or appetizers

Tomato pesto, crumbled bacon, and chopped toasted nuts are good. Heat in the oven until warm and creamy. If dairy isn't your thing, use beans as the base for dips. Ashton says combine a can of beans (black, pinto or navy are good), a chopped chipotle chile, lime juice and salt in a food processor and pulse until smooth. Alternatively, buy a tub of hummus and doctor it with pesto or tapenade. For another dairy-free option, Sandy Gluck, food editor at Everyday Food magazine, says to puree a small jar of roasted red peppers, a tablespoon of tomato paste, paprika and 1/4 cup toasted almonds. Now, on to the canapes and appetizers, or antipasti, if you prefer. These ideas are from Mary Ann Esposito, host of Public Television's long-running "Ciao Italia" cooking show and author of the recent "Ciao Italia Slow and Easy" cookbook."I like to do an antipasti that is unexpected," she says.

Letter From a Young American

I watched as the passion and hope of the sixties evaporated into the hopelessness of the seventies and the BIG LIE of the eighties. I know your anger. It is an energy that can and must be harnessed. Let the old politics of privilege and power end with the election of President Obama. We the people can make this happen with our $25, and $50 donations. If you're tired of the Insurance companies, banks and oil companies; argi-businesses, wall street tycoons and the ultra rich running this country for their own benefit - give what you can, do what you can but most of all say who you are. Talk about this movement at church, at work, in your neighborhood. Put your reputation on the line. Stand up and be counted. We can retake this nation for the people and make it an agent of change in the world.

Auburn elementary school sees test scores, fitness both rise from ...

It's Morning Madness, and the kids at Pioneer Elementary School in Auburn are pumped up as usual. Armed with their portfolios outlining skill tasks, they arrive an hour before school starts, heading for the school gym to play with a purpose. As many as 70 youngsters, grades three to five, show up three days a week. There is no pressure. It's voluntary.

Mr. Mac, aka Michael McKinley, the school physical education teacher, is the Pied Piper. He watches and encourages as the youngsters walk on stilts, jump rope, swing Hula-Hoops, roll a Chinese yo-yo, balance on a moon-walker, climb a rope, chin themselves.

Rock music blares from the boom box.

Started last September, Morning Madness is the newest wrinkle in Pioneer's three-year-old healthy lifestyle initiative started by Principal Debra Gary.

NASA extends shuttle mission by one day

While the U.S. space agency refrained from commenting on the nature of the illness or whom it afflicted, ESA officials revealed some details earlier today on their blog chronicling Atlantis' mission to deliver the European Columbus laboratory to the ISS.

"Hans Schlegel went into space in perfect health condition," wrote Volker Damann, head of the ESA's Crew Medical Support Office, in mission update posted to the blog. "However, he has developed a condition that is neither life threatening nor does it impact the health of other crew members — but is currently not compatible with a space walk."

ESA officials said they were confident Schlegel would be ready for the second of three planned spacewalks for Atlantis' STS-122 mission. That spacewalk, also to be performed alongside Walheim, is now scheduled for Wednesday.
